Mussels With Garlicky Miso Broth Recipe
Mussels deserve your attention on weeknights. An affordable and accessible protein, they also happen to cook in less time than it takes to boil water. As the bivalves steam, they release a briny liquid, further perfuming the buttery, sake-fortified miso broth. The seafood counter at your supermarket should sell rinsed and debarred mussels, but it’s easy to do at home. Discard any with cracked shells.
